THE FLAVOURS OF SARAWAK
International Cuisine & Modern Fusion Sarawakians are generally adventurous in their tastes, so there is an enthusiastic demand for international dining. In the major towns, Japanese, Korean, Thai,
Vietnamese, Indonesian
and Filipino food competes (and often combines) with French, Italian, Spanish, German, Middle-Eastern, American and Australian, and innovative fusion restaurants are sprouting up all the time.
Fine dining opportunities abound in elegant specialist restaurants, major hotel outlets and private clubs, but simple yet well-cooked foreign dishes can even be found in coffee shops, pubs and hawker stalls.
A tempting selection of sashimi and sushi served by a Japanese restaurant in Kuching. The combination of fresh local fish and air-flown cold-water fish makes for a gastronomic sensation.
Increasingly more local chefs are combining international cooking styles with imported and local ingredients to create a proudly Sarawakian fusion cuisine.
Even the simplest of Western dishes - such as the humble beefburger or a serving of grilled lamb chops - are utterly transformed with the addition of home-made Sarawak black pepper sauce, using peppercorns freshly picked from local vines.
