THE FLAVOURS OF SARAWAK
Stunningly attractive iced Sarawak coffee, served in distinct layers by an enterprising local restaurant.
Drinking Habits
The non-Muslim indigenous communities in Sarawak produce their own delicious rice wines, referred to
as tuak by the Iban and Bidayuh and borak by the Orang Ulu. The Bidayuh also brew tuak from sugar
cane and various jungle fruits, with fascinating and potent results. Straight from the longhouse or kampung is always best and many outlets have their own sources, but commercially produced tuak can be found in supermarkets, along with
an intimidating variety of highly potent clear arak brands, which should be treated with caution.
The most popular beers are Malaysian-brewed Tiger and Heineken, along with
Tuak, the traditional rice wine of the Iban and the Bidayuh, is nowadays available commercially. Three different brands are shown here.
